Batata Vada, is an Indian street food recipe, that has its origin in Maharastra. Mumbai's popular snack is made with mashed potatoes and besan and deep fried. When Batata Vada is sandwiched between green chutney smeared pav, it becomes a Vada Pav, another of Mumbai's famous street food snack. The vada pav recipe is made of a spicy potato filling deep fried in a gram flour batter.

  1. Take a bowl add maize and chickpeas flour,combine all ingredients except oil. Mix well. Now make thick batter by adding the water gradually. Check consistency.

  3. For Stuffing :: Meshed the potatoes. Keep aside. On medium flame heat 1 tsp oil in a wok. Add cumin seeds roast it slightly on low flame.
  4. Now add meshed potatoes, on medium flame, add all the Stuffing ingredients one by one. Roast it 1-2 minutes continuously. Turn off the flame. Keep aside for cooling on room temperature.
  5. Grease hands with oil & make small balls to the stuffing & keep in a plate.
  6. On low flame heat the appam pan & pour a drop of oil in the all cavity. Lift a ball dip & coat it with the batter. Put it appam pan. Cook for 2 minutes and cover with lid.
  7. Cook Vada's till it's turn into golden in colour then flip. Now pour a drop of oil over it. Flip again on low flame & cook for 2-3 minutes.
  8. Check Vadas. If it seems baked all the sides, transfer into the serving plate.
